From my point of view: 

Most eventfull destination in Croatia - Zagreb for public events, definitely; for corporate and high-end Dubrovnik is still on top; lots of rising stars - Rovinj, Zadar...

"Wow" factor that hits me immediately - special lighting for evening events (hard to choose one); room with the view for day time meetings (like in hotel Dubrovnik Palace - conference room Mare)

Perfect event venue - definitely Revelin Fortress in Dubrovnik - unbeatable - both impressive interior and the terrace with the view (it is rare to have such a good "bad weather alternative") 

If I could, I would like to organize a gala, even a bit decadent event in Golden Hall in Zagreb situated in 19th century palace which today houses the Croatian History Institute. I see the ceremony of signing the very important contract; a toast with classical music background (lets say famous croatian lady composer Dora Pejacevic) followed by elegant candlelght gala dinner ... The Golden Hall is a veritable gallery of Croatian art (end of the 19th century); its interior being adorned by valuable works of art by Croatian painters and sculptors – Csikos-Sessia, Frangeš, Medović, Tisov, and others. The Palace is separated from the street by little garden ideal for cocktails with the most beautiful wrought iron fencing work to be seen in Zagreb. 

I will always remember gala dinner and awards ceremony organised for Scandinavian corporate client on Šibenik main square (privatised for the event) - opulent ambiance, original decor, smooth jazz music, mediterranean cuisine - definitely "wow"
